Per preparare l’impasto base setacciare la farina sulla spianatoia, aggiungervi un pizzico di sale ed il lievito sbriciolato. Lavorare sfregando fra le mani in modo che il lievito possa unirsi bene alla farina. Unire man mano poca acqua tiepida fino ad ottenere un impasto di consistenza piuttosto molle. Trasferire l’impasto in una terrina e lavorarlo ancora per qualche minuto, lasciare riposare per 2 ore. In un tegame abbastanza profondo fare scaldare l’olio e friggervi l’impasto che verserete poco alla volta aiutandovi con un cucchiaio. All’impasto di base si possono aggiungere:
– peperoncino, pomodori, capperi ed olive (pizzaiola) – baccalà (cotto in precedenza) – zucca gialla – cavolfiore.
Ingredienti:
1/2kg. di farina tipo 00;
1 cubetto di lievito di birra;
sale;
acqua;
olio per friggere.
